The Complete Idiot's Guide To Pool & Billiards by Ewa Matay Laurence and Thomas C Shaw. This is an excellent book for beginners and has many chapters of useful information. It has the added benefit of personal insights from a professional pool player.

Byrne's New Standard Book of Pool and Billiards by Robert Byrne. This book is an old standby that runs the gamut from the fundamentals to strategy to trick shots. The book is in two sections - the first on pool and the second on three-cushion billiards.
